For 1 kilo of chicken, meat, prawn or fish, prepare a marinade of 3 tabs with an equal quantity of yoghurt. Heat is provided by the black pepper (meerem). However, the use of green chillies is recommended. Addition of coconut milk is advised when cooking with seafood and chicken. Variations may incorporate the use of yoghurt/buttermilk and the addition of all manner of fragrant fresh herbs, namely coriander, kafir lime, mint.
